I love bubble tea and had a crack at making my own! The recipe I'm going to share is the recipe I've perfected to my liking. Well almost perfect but good enough! haha (I think it's the tea leaves that makes the difference). I will be attempting other flavours soon!
First off, you will need to prepare the tapioca pearls aka the "bubbles" in bubble tea.
Serves 6-8 depending on how much you add in a person's cup!
Ingredients:
1 cup tapioca pearls
7 cups water
Method:
- In a sauce pan, bring the water to boiling point and then add in the tapioca pearls. Let it boil with a lid on for 15 minutes. Don't worry if they look enormous, it'll shrink when the heat is off!
- After 15 minutes turn off the heat and let it sit for another 15 minutes.
- Drain the pearls with warm water and put it into a container covering it with sugar syrup. Set aside.

Notes:
- This tastes better eaten on the day of making it! To preserve it freeze it in a seal-able bag lying flat and when you need it, boil a cup of water adding the frozen pearls for 2-3 minutes, rinse, cover with syrup and serve.
Making the sugar syrup
Ingredients:
1 cup white sugar
1 cup brown sugar
2 cups water
Method:
- Mix the sugar and water in a saucepan.
- Cook this on medium - high heat.
- Once it starts to boil, remove it from the heat and let it cool.
Notes:
- This makes quite a lot; for a serving of 6, I suggest to half this amount.
- You can refrigerate any excess.
Making The Slush Milk Bubble Tea
Serves 1-2
Ingredients:
3/4 cup of strong tea (chilled)
3 tbsp sugar syrup (or to taste)
1/4 cup evaporated milk
1 & 1/2 cup crushed ice
Method:
- Place all the ingredients into a blender and blend away!
- To complete this bubble tea drink, add your desired amount of tapioca pearls into your glass and then pour the drink on top. ENJOY!

Notes:
- When making the tea, I suggest you use 1 tea bag to every cup of water! (I used PG Tips) Let the tea bag brew in the water for a 10 minutes before removing it. Let it cool before making your drink!
- Assam tea is probably the best option for making this!
- If you don't want it to be a slushie, just replace the ice with water according to your liking! I was impatient and didn't let my tea cool down enough so the ice melted as soon as it was blended (which is what you see in the pictures lol!).
