I love all baked banana goods! Banana loaf cake, banana muffins, banana bread... You get the jist :P
And today I will share a Blueberry and Banana muffin recipe with you!
These muffins are really soft and moist and just perfect for those sweet cravings! I tried to make this recipe as healthy as I could without it being a complete fail haha! Hope you enjoy it!
3 ripe med-large bananas (the more dots the better!)
3 tbsp honey (I used Manuka Honey)
1 tbsp chia seeds mixed with 3 tbsp water (this is a substitute for 1 egg)
1/3 cup melted coconut oil
1 cup blueberries
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup plain flour
1/2 cup wholemeal wheat flour
Method:

- Preheat your oven to 190°C.
- Grind your chia seeds in a food processor or spice grinder, mix with 3 tbsp of water until it becomes a gooey paste. Leave it aside for 5 minutes.
- Mash your bananas, set aside.
- Mix the honey and chia seed paste together.
- Add in your blueberries and coconut oil.
- Mix in all the dry ingredients and then the mashed bananas bit by bit until well combined.
- Grease your muffin tray with oil or non stick cooking spray.
- Evenly divide the batter into your muffin tray, this is enough for a tray of 12.
- Bake for 20-25 minutes or until they have browned and toothpick comes out clean!
- Let it cool on a cooling rack for a few minutes before serving, enjoy!
Notes:
- The more ripe your bananas the less honey you will need as the bananas will add to the sweetness!
- You can use an egg if you don't want to use the chia seeds sub!
